Coolamon Cheese is the brainchild of Barry Lillywhite, Cheesemaker of 35 years & his son Anton Green, a front of house hospitality professional
Barry’s background in science & microbiology led him to start cheese making over 30 years ago & has taken him all over Australia, including 13 years at Charles Sturt University in Wagga Wagga, managing the cheese factory, marketing & selling a unique & successful product range; his Native Australian range of semi hard cheeses
In 2011 when CSU closed the factory & changed the direction of their program there was an overwhelming call from the community to retain/re-establish a Riverina tourism icon. The decision to establish the factory in Coolamon was made after the Coolamon Shire Council approached Barry asking what they could do to ensure the factory be located in Coolamon & provided support & championed for the project from the beginning
It was at this time that Barry called upon Anton, who had been working in hotels overseas to come home & start a family business in Coolamon that would become a ‘cellar door’ for cheese showcasing Barry’s talent in cheesemaking, offering workshops & highlighting dairy & produce from across the region
After 5 years of research, planning & hard work the vision has become a reality
