Barry (AKA The Big Cheese)

Founder & head Cheesemaker Barry Lillywhite has over 30 years’ experience in the dairy industry making award winning cheeses, teaching cheese making workshops, consulting within the industry, providing dairy ingredients to Australia’s boutique dairy industry & acting as a cheese judge. He has won countless awards, medals & recognition; in particular for the range of cheese he developed using Australian Native Flavours.

Over the years Barry has made a wide variety of cheese & dairy products using milk from cows, sheep & goats. This experience ensures flexibility in product offering & allows for a diverse range of products.



Founder & Managing Director Anton Green has over 15 years of experience within hospitality industry, working & managing in a number of 5 star hotels & resorts in Australia & abroad. Anton has a passion for quality service, fresh & local produce & developing relationships with people from all walks of life. Building on his practical experience Anton has recently graduated with a Bachelor of Business – International Hotel Management at Southern Cross Uni. Anton has experience in a range of capacities within the hospitality industry, from bars & restaurants, to functions & front office giving him a well-rounded approach to service & operations.



Chef Christopher Galvin-Moule is heading up the kitchen with experience gained in establishments such as The Parkroyal Darling Harbour, Novotel Palm Cove and Darleys Restaurant at Lillianfels Hotel Blue Mountains. With years of experience behind him Chris has been tasked with matching Coolamon Cheese with the best produce the Riverina has to offer in an inventive and delectable all day menu.



Cheese maker Adam Papprill started making cheese in 2002 in his native New Zealand & has since worked at a number of artisan cheese factories. Adam has experience producing a wide range of cheeses winning medals at both State & National levels. His strong work ethic, dedication & passion for cheese making & is a welcome addition to the Coolamon Cheese family.



Venue & brand Manager Kate Mitchell joins the Coolamon Cheese team bringing with her a wealth of experience in management & operations. Kate has worked in bars, hotels, a 2-hat restaurant & the airline industry over the past 18 years. Kate is currently completing a Diploma of Interior Design & Decoration & has a love of premium venues, quality food & wine. Kate’s involvement in Coolamon Cheese extends from the Interior design to day operations once open.
